Ingredients for the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Premix (makes 850ml, to serve 10)

A few cranberries, to garnish
Mandarin essential oil, for finishing

Instructions

Making the Syrup: Combine every ingredients in a saucepan, heat until it reaches a light boil, mixing until the sugar dissolves. Then, turn off the heat and leave to reach room temperature completely. Decant to a sterilised bottle, seal keeping it chilled, where it will keep for up to a month.

Preparing the Premix: Pour every spirits and syrup in a big jug, let it rest for one hour, then strain preferably using a fine cloth, so it's perfectly clear.

When ready to serve: Measure 85ml of the cocktail base to a stirring glass packed with ice, gently stirring lightly for a minute to chill. Strain into a cold coupe glass or equivalent, decorate with the cranberries adding the final touch by giving it a brief mist with the mandarin essence over the drink.
